Ginger Miso Karaage Ramen Salad

Ingredients
- 500g Betagro Fully Cooked Chicken Karaage, prepared according to package direction
- 8 oz (225 g) Cantonese noodles, cooked and cooled
- 1/4 cup (60 mL) ginger miso dressing
- 1/4 cup (60 mL) sweet hot chili sauce
- 1 cup (85 g) carrot, shredded
- 1 cup (120 g) cucumber, thinly sliced
- 2 cups (50 g) baby arugula
- 1/2 cup (80 g) edamame beans
- 2 tbsp (30 mL) cilantro, chopped
- 2 tbsp (30 mL) mint, finely chopped
- 2 tsp (10 mL) toasted sesame seeds
- 2 eggs, soft boiled (optional)
Preparation
- In a large bowl, toss the cooked and cooled noodles with the ginger miso dressing and sweet chili sauce
- Add carrot, cucumber, arugula, edamame, half of the cilantro, half of the mint, and half of the sesame seeds
- Toss gently to combine, set aside.
- Prepare the karaage according to package directions
- Add the karaage to the bowl and toss lightly until evenly coated
- Divide into bowls
- Top with halved soft-boiled eggs, if using
- Garnish with remaining cilantro, mint, and sesame seeds
