Ingredients

  • 180 g (2 pcs) Betagro Fully Cooked Chicken Breast Katsu, prepared according to package directions
  • 4 cups (1 L) shredded cabbage or coleslaw mix
  • 1 cup (150 g) sliced cucumber
  • 1/2 cup (75 g) shredded carrot
  • 2 radishes, thinly sliced

Sesame Dressing

  • 2 tbsp (30 mL) soy sauce
  • 2 tbsp (30 mL) rice vinegar
  • 1 tbsp (15 mL) sesame oil
  • 1 tbsp (15 mL) honey

Optional garnish

  • 1 tsp sesame seeds
  • sliced green onions

Preparation

  1. Cook the chicken katsu according to package directions until hot and crispy. Slice each cutlet into strips.
  2. In a large bowl, combine cabbage, cucumber, carrot, and radish.
  3. In a small bowl whisk together soy sauce, rice vinegar, sesame oil, and honey.
  4. Toss the salad with the dressing.
  5. Divide the salad between bowls and top with sliced chicken katsu. Sprinkle with sesame seeds and green onions if desired.
