Ginger Miso Karaage Ramen Salad

Ingredients

  • 500g Betagro Fully Cooked Chicken Karaage, prepared according to package direction
  • 8 oz (225 g) Cantonese noodles, cooked and cooled
  • 1/4 cup (60 mL) ginger miso dressing
  • 1/4 cup (60 mL) sweet hot chili sauce
  • 1 cup (85 g) carrot, shredded
  • 1 cup (120 g) cucumber, thinly sliced
  • 2 cups (50 g) baby arugula
  • 1/2 cup (80 g) edamame beans
  • 2 tbsp (30 mL) cilantro, chopped
  • 2 tbsp (30 mL) mint, finely chopped
  • 2 tsp (10 mL) toasted sesame seeds
  • 2 eggs, soft boiled (optional)

Preparation

  1. In a large bowl, toss the cooked and cooled noodles with the ginger miso dressing and sweet chili sauce
  2. Add carrot, cucumber, arugula, edamame, half of the cilantro, half of the mint, and half of the sesame seeds
  3. Toss gently to combine, set aside.
  4. Prepare the karaage according to package directions 
  5. Add the karaage to the bowl and toss lightly until evenly coated
  6. Divide into bowls
  7. Top with halved soft-boiled eggs, if using
  8. Garnish with remaining cilantro, mint, and sesame seeds
